A Green Smoothie to Get This Friday Going.

Is it just me, or does the Friday before a long weekend always seem longer than other Fridays? I haven’t even finished getting ready for work yet and the day is already dragging. Maybe my coffee will help speed things up?

Or, maybe I’m just excited because Devin has a surprise date planned for us tonight. It’s Devour Downtown time here in Indy, which means a lot of the well-known restaurants have special deals. It’s the perfect time to try a restaurant that we wouldn’t otherwise throw money at, outside of a special occasion. My lovely husband knows that I love Devour Downtown (and food in general), so he made a reservation for us – but he won’t tell me where. Which is so sweet and wonderful but I have NO idea what to wear. Struggles.

Long weekend and dinner plans aside, it wasย very hard for me to get out of bed this morning. I needed something to start the day off on a good, healthy note. So, in addition to my usual eggs and coffee, I made my favorite green smoothie.

Smoothies are a great way to get an extra serving of veggies in, without having to work very hard – and I’m all about that.

4 ingredients, with a lot of options.

To make this smoothie, I used:

  • 1/2 banana (I normally use frozen, but used fresh this morning)
  • 1 cup spinach*
  • 1/2 cup unsweetened almond milk
  • 1/2 – 1 scoop protein powder (optional)

*DID YOU KNOW YOU CAN FREEZE SPINACH?! This was monumental for me to learn, because I feel like I could never use it all before it went bad. If I bought less, I would run out too quickly. Now I just throw the bag in the freezer for my smoothie needs. Clearly it doesn’t take much to excite me. I’m not ashamed.

You can use whatever protein powder you love for this smoothie, or you can use no protein powder at all. Since I was already eating eggs for breakfast, I didn’t use any protein this time. However, when I drink this smoothie as a snack or when I’m rushed in the mornings, I use a scoop. I love everything Quest, and I think their peanut butter protein powder works really well in smoothies. The peanut butter taste isn’t too strong, but it makes this smoothie kind of like a peanut butter shake…except it is green.

I love to use my Ninja for this smoothie because it has the option to use an individual cup. Then I can just pop the drinkable lid on and go. You could also use a Nutribullet, Magic Bullet or similar, or just an old-fashioned blender. However, an older blender may not break the greens down to an unnoticeable consistency like some of the newer models do.

The other great thing about this smoothie is that you have options. Everyone loves options.

  • Want to add some extra healthy fat? Add some chia seeds.
  • Or, add some flax.
  • Not using protein powder but want to add some flavor? Add a tablespoon of your favorite nut butter. I love Justin’s vanilla almond butter, and plain old Jif Natural Creamy. If you need more sweetness, try a little honey.
  • Tired of spinach? Try Kale, or other leafy greens like swiss chard.
  • Prefer a fruity flavor? Add some frozen fruit!
  • Like a thicker consistency? Add a few ice cubes.

The options are really endless, and it’s kind of fun (well, my kind of fun) to experiment and find new favorites. I’m currently working on a good coffee-flavored smoothie to kill two birds with one stone. I’ll let you know when I perfect it ๐Ÿ˜‰
